I made the beef and radish soup that my daughter loves the most. While she was watching ‘Three Meals a Day’ next to me, she said, ‘That looks so delicious!’ Hearing that, I couldn’t help but tune in myself. I was particularly surprised when Chef Cha Seung-won added tuna extract! I had never used tuna extract in my radish soup before. Thinking, ‘That must be really delicious too!’, I immediately started cooking. Above all, the cut of beef was exquisite, so I expected the flavor to be amazing. Luckily, I had some chuck tail left from grilling, so I used that. I only simmered it briefly, but the meat was so tender and delicious. As expected, using a premium cut of beef makes a big difference in the soup’s flavor. This beef and radish soup, with its deep yet clean taste, is incredibly delicious. Ingredients

  • Chuck tail beef 1 piece (approx. 100-150g)
  • Radish a small amount (approx. 1/4 head)
  • Rice water 1.2L

Seasoning

  • Tuna extract 2 Tbsp
  • Salt (to adjust seasoning)
  • Minced garlic 1 tsp
  • Scallions, chopped
  • Sesame oil 1 Tbsp

Cooking Instructions

Step 1

First, wash the radish thoroughly under running water, peel it, and then cut it into uniform, bite-sized pieces about 0.5cm thick (na-bak style). Avoid slicing too thinly, as it might break down too much during cooking.

Step 2

Pat the chuck tail beef dry with paper towels to remove any excess blood. Then, slice it into pieces about 1cm in size, suitable for eating. Cutting it too small might cause it to fall apart during cooking.

Step 3

In a deep pot or wok, combine the sliced beef, radish, and 1 tablespoon of sesame oil. Stir-fry over medium heat for about 2-3 minutes until the beef is just browned on the outside. This step helps to extract more flavor from the beef and radish.

Step 4

Once the beef and radish have been sautéed, pour in the prepared rice water (1.2L) and bring to a boil over high heat. Once boiling, reduce the heat to medium and let it simmer gently for about 15-20 minutes, or until the radish becomes transparent and tender. Using rice water will give the soup a milky appearance and a richer, nuttier flavor.

Step 5

When the radish is sufficiently cooked, add 2 tablespoons of tuna extract and 1 teaspoon of minced garlic. Taste and adjust the seasoning with soy sauce or salt as needed. Finally, add the chopped scallions and simmer for another minute or two to complete this deeply flavorful beef and radish soup.

Step 6

Ladle the finished beef and radish soup into serving bowls. You can add a pinch of black pepper if desired. Enjoy a hearty and satisfying meal with this warm and flavorful soup!
