This recipe was born out of a need to use up leftover Parmesan cheese, but it turned out so delicious that I now make them as gifts. They disappear so quickly, though, I often end up eating them all myself! Come discover the irresistible charm of these delightful cheese cookies.
Cookie Dough Ingredients- 150g unsalted butter, softened to room temperature
- 90g sugar
- 1 large egg, at room temperature
- 180g cake flour
- 100g grated Parmesan cheese
Cooking Instructions
Step 1
First, to ensure a perfectly crisp cookie, sift the cake flour and grated Parmesan cheese together. This helps to prevent lumps and creates a smoother dough.
Step 2
In a mixing bowl, cream the softened unsalted butter until smooth using a whisk or electric mixer. Add the sugar and mix lightly until just combined. Don’t over-mix at this stage.
Step 3
Whisk the room-temperature egg lightly in a separate small bowl. Gradually add the beaten egg to the butter and sugar mixture, mixing well after each addition. Add slowly to prevent the mixture from curdling.

With the butter-egg mixture still slightly grainy from the sugar, add the sifted cake flour and Parmesan cheese mixture. Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overwork the dough; mix only until no dry flour streaks remain.
Step 5
Use a spatula to cut through the dough, as if you were scrambling eggs. Mix just until the dough comes together. Avoid kneading or overmixing, as this can result in tough cookies. The goal is a cohesive dough, not a stretchy one.
Step 6
Gather the dough into a ball and shape it into a log or rectangle. Wrap it tightly in plastic wrap and chill in the freezer for at least 1 hour, or until firm. This firming step is crucial for easy slicing without the dough crumbling.

Once the dough is firm, unwrap it and slice it into uniform pieces, about 0.5 to 1 cm thick. Arrange the cookie slices on a baking sheet lined with parchment paper, leaving some space between each cookie to allow for slight spreading.
