- 1/2 Tbsp minced garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
- Water (for thinning, as needed)
Cooking Instructions
Step 1
Cooking chicken breast whole for a steak can sometimes result in a dry texture and uneven cooking. To avoid this, we’ll prepare it in a way that ensures it stays moist and tender.
Step 2
Carefully slice the chicken breast horizontally to butterfly it, creating a thinner, more even cut. This technique speeds up cooking, preventing dryness and ensuring the inside is perfectly cooked. You’ll often see chicken prepared this way in markets abroad, sometimes labeled as ‘butterfly cut’ in culinary terms.
Step 3
Season the butterflied chicken breasts evenly with salt and pepper. Drizzle with olive oil and gently coat the surface. The olive oil helps to protect the chicken and enhance its flavor.
Step 4
While the chicken is seasoning, prepare your side dishes. Trim the ends of fresh green beans. Core the apples and cut them into 7-8 wedges. Place the green beans and apple wedges in a bowl, season lightly with salt and pepper, and toss with olive oil. (Feel free to substitute other vegetables like asparagus or broccoli.)
Step 5
Peel the 3 cloves of garlic and give them a coarse mince. Coarsely chopped garlic adds a wonderful depth of flavor to the dish.
Step 6
Slice the lemon into thick rounds, about 1.5 cm (approx. 0.6 inches) thick. Slicing them too thinly might cause them to break down or burn too quickly in the pan.
Step 7
Heat a skillet over medium heat. Place the seasoned chicken breasts in the hot skillet and sear until golden brown on both sides. Maintain medium heat to ensure the chicken cooks through evenly without drying out.
Step 8
In the same skillet used for the chicken, add the prepared green beans and apple wedges. Sauté them for a minute, then add about 1 tablespoon of water and cover with a lid. This creates steam, helping the vegetables and apples cook quickly. Finally, add the lemon slices to the pan and cook alongside the other ingredients. As the lemon heats up, it will release its juice naturally, adding a bright citrus aroma.
Step 9
Now it’s time to plate your beautiful meal! Arrange the cooked chicken steak on a plate. Top the chicken with the warm, roasted lemon slices. It’s best to simply place the lemon on top rather than squeezing it directly, allowing its natural fragrance and juice to meld with the chicken as it cools. Serve with the green beans and apples, and don’t forget to spoon over the sauce for a complete restaurant-quality experience!
Step 10
Let’s make the sauce. In a saucepan, melt 3 tablespoons of butter over medium heat. Whisk in 2 tablespoons of flour and cook, stirring, until it forms a smooth paste and starts to turn a light golden brown. Add the minced garlic and cook until fragrant, about 30 seconds. Gradually whisk in water, starting with a small amount, until you reach your desired sauce consistency. You can make it thicker or thinner to your preference. Season with salt and pepper to taste. Stir until smooth and the sauce is ready.
Step 11
This chicken steak makes for a wonderfully satisfying meal. If you’re looking for a heartier option, consider serving it with mashed potatoes or rice instead of apples. For a lighter meal, the apples alone are perfect. If you’re on a diet but still feel a bit hungry, a slice of whole wheat bread on the side would be a great addition.
