Wash the cherry tomatoes thoroughly under running water and remove the stems. (Tip: You can score the bottom of the tomatoes with a cross to shorten the blanching time, but if you prefer to skip this step, simply removing the stems and blanching for a bit longer works well too.)

Once the water is boiling vigorously, add the cherry tomatoes and blanch them briefly. (Tip: The larger and fresher the tomatoes, the longer it might take for their skins to split. Blanch until the skins just begin to crack.)

As soon as the tomato skins start to split, immediately remove them from the boiling water and rinse them under cold running water. This rapid cooling helps to stop the cooking process and makes peeling easier.

Once slightly cooled, carefully peel the skin off each cherry tomato. Removing the skin ensures a wonderfully smooth and refined texture in your marinade.
