Now, it’s time to remove the thin white pith from the individual segments. By gently pulling the pith from the inside of the segment, you’ll find it surprisingly easy to detach.

Layer a portion of grapefruit, followed by an equal amount of sugar, and repeat this process until the jar is full. The advantage is consistent layering, but a potential drawback is that the sugar might not dissolve as quickly and can appear clumpy initially.
