  • 3 Tbsp Gochugaru (Korean chili flakes)
  • 3 Tbsp Jin Ganjang (Korean soy sauce for soup)
  • 1 Tbsp sugar (leveled)
  • 2 Tbsp vinegar
  • 1 Tbsp minced garlic
  • 1 Tbsp toasted sesame seeds
  • 1.5 Tbsp salt (leveled)

Cooking Instructions

Step 1

Wash the cucumbers thoroughly by rubbing them with coarse salt. Then, peel them in a roughly scattered pattern. Cut each cucumber in half lengthwise, and then slice them diagonally into thick pieces, about 0.5 cm thick. This step is crucial for achieving a crisp texture.

Sprinkle the sliced cucumbers evenly with about 1.5 Tbsp of salt (leveled) and let them sit for about 20 minutes to pickle. This process draws out excess water, ensuring a crispier and tastier cucumber salad.

Thinly slice the onion and soak it in cold water for about 20 minutes to remove its pungency. This helps to mellow the sharp flavor of the onion while retaining its natural sweetness, enhancing the overall taste of the salad.
