How to Make Dolminari Fruit Water Kimchi
Using leftover apples and pears from home, we’ve made a refreshing fruit water kimchi that’s perfect for kids to enjoy. It’s a delicious specialty that tastes even better when fermented and chilled.
Main Ingredients- 1 medium apple
- 1/2 medium pear
- 1/2 small Korean radish (mu)
- 1 bunch dolminari (water dropwort)
- 1 bunch green onions (scallions)
Seasoning & Broth- 3 Tbsp cooked rice (any cooked rice is fine)
- 1 Tbsp minced garlic
- Coarse sea salt (for salting and seasoning)
- 1.5 liters water (for broth and mixing)

Cooking Instructions
Step 1
Wash the Korean radish thoroughly and slice it into thin, bite-sized pieces (about 0.5cm thick). Place the sliced radish in a bowl and sprinkle 1-2 Tbsp of coarse sea salt over it. Gently massage the salt into the radish. Let it sit for about 15-20 minutes to salt. If desired, you can toss it halfway through for even salting. After salting, rinse the radish under cold running water a couple of times to remove excess salt and squeeze out any remaining water.
Step 2
Wash the apple and pear well, then peel them. Remove the core and seeds, and slice them into similar bite-sized pieces as the radish (about 0.5cm thick). Slicing the fruit into manageable pieces will make it easier to blend later.
Step 3
Rinse the dolminari under cold running water. Trim off any tough stems. Cut the dolminari into approximately 5cm lengths. Wash the green onions and cut them into similar 5cm lengths. Cutting them to this size will make the kimchi easier to eat.
Step 4
In a blender, combine 3 Tbsp of cooked rice, 1 Tbsp of minced garlic, a pinch of coarse salt (for blending), 1/2 a coarsely chopped onion, and the sliced apple and pear. The sweetness from the fruit and the cooked rice will contribute to a smooth and flavorful kimchi broth.
Step 5
Add 1 liter of water to the blender and blend all the ingredients until smooth and well combined. Ensure everything is thoroughly pureed for a consistent texture.
Step 6
Place a sieve over a large kimchi container or bowl. Pour the blended mixture into the sieve. Use a spatula or ladle to gently press down and strain the liquid broth into the container, leaving the solids behind. Make sure to strain thoroughly to extract as much liquid as possible.
