Refreshing Summer Delight: How to Make Gazpacho

This is a dish I absolutely adore! I make it every summer without fail. The ingredients are simple, and making it is quite easy – all you need is a blender! I enjoyed it with grilled cheese:)
Ingredients- About 20 cherry tomatoes (approx. 300g)
- 1 red bell pepper
- 1/2 cucumber
- 1/8 small onion (or 1/4)
- 2 cloves garlic
Cooking Instructions
Step 1
First, remove the seeds from the red bell pepper and chop it into large pieces. Since you’ll be blending it later, there’s no need to chop it finely.
Step 2
Place the chopped bell pepper in a dry, preheated pan without any oil. Stir-fry it over medium heat until it’s slightly charred and softened. This process enhances the pepper’s natural sweetness and deepens its flavor. Let the cooked bell pepper cool down slightly.
Step 3
Now, prepare the other vegetables. You can peel the cucumber or leave the skin on, and then chop it into pieces about 1cm in size.

Similarly, chop the onion into pieces about 1cm in size.
Step 5
Add the sautéed bell pepper, chopped cucumber, onion, and 2 cloves of garlic to a blender. Layering the vegetables can help with smoother blending.
Step 6
If you prefer a very cold gazpacho, it’s best to let the sautéed bell pepper cool completely or add ice cubes when blending. I was a bit impatient and blended it while it was still slightly warm! (lol)
Step 7
Add the washed cherry tomatoes to the blender. About 20 tomatoes should be a good amount.
Step 8
Pour in 1 tablespoon of Worcestershire sauce, and add a pinch of salt and pepper to enhance the flavor. It’s best to start with a smaller amount as you can adjust the seasoning later.
Step 9
Now, blend all the ingredients until smooth. Continue blending until the ‘whirring’ sound stops and everything is uniformly mixed.
Step 10
Finally, stir in 1 tablespoon of balsamic vinegar and 1/2 tablespoon of olive oil, blending just briefly to combine. Your refreshing and cool gazpacho is ready! Taste it and adjust salt, pepper, or vinegar as needed to suit your preference. For the best flavor, chill it in the refrigerator before serving.
