Crafting a Delightful Citrus Cheese Tart Featuring Seasonal Green Tangerines
Introducing the vibrant Green Tangerine Cheese Tart, a special treat I made for my son’s birthday last year. This tart captures the essence of summer with its unique flavor profile. For the tart crust recipe, please refer to my previous post. This recipe will elevate any occasion!
Tart Crust and Filling Ingredients- 1 pre-made tart crust
- 100g cream cheese (softened at room temperature)
- 35g sour cream
- 35g granulated sugar
- 1 tsp vanilla sugar (enhances flavor with vanilla notes)
- 50g heavy cream (chilled)
- 2 Tbsp green tangerine juice (freshly squeezed)
- 2 gelatin sheets (soaked in cold water for at least 5 minutes)

Cooking Instructions
Step 1
First, thinly slice the green tangerines into half-moon shapes for decoration. Also, squeeze 2 tablespoons of fresh green tangerine juice. Preparing all your ingredients in advance will make the cooking process much smoother.
Step 2
In a bowl, place the softened cream cheese (100g) and whip it using a whisk or electric mixer until smooth and creamy. Ensure there are no lumps for easy mixing in the next steps.
Step 3
Add the sour cream (35g) to the whipped cream cheese and continue whipping until the mixture is smooth and velvety. Sour cream adds a refreshing tang and smooth texture to the filling.
Step 4
Gradually add the granulated sugar (35g) and vanilla sugar (1 tsp) in 2-3 additions, mixing well after each addition until the sugar is completely dissolved. Adding sugar in stages helps it incorporate smoothly and prevents a grainy texture.
Step 5
In a separate bowl, whip the chilled heavy cream (50g) until soft peaks form. Avoid over-whipping; the cream should be smooth enough to blend easily with the cream cheese mixture. Gently fold this whipped cream into the cream cheese mixture.
Step 6
Stir in the green tangerine juice (2 Tbsp) into the cream cheese mixture. Next, drain the soaked gelatin sheets and microwave them for about 10-15 seconds until just melted. Quickly incorporate the melted gelatin into the cream cheese mixture, stirring rapidly to ensure it’s well combined without clumping.
Step 7
Your delicious green tangerine cheese tart filling is now ready! You can already sense the smooth texture and refreshing aroma.
Step 8
Carefully pour the prepared cheese filling into the pre-baked tart shell. Fill it to the desired level, ensuring not to overfill, and smooth the top surface. Place the filled tart in the refrigerator to set for at least 2 hours, allowing the filling to firm up nicely.
Step 9
Once the tart filling has set completely, arrange the thinly sliced green tangerines around the edge of the tart for a beautiful presentation. The vibrant green will make the tart visually appealing.
