Main Ingredients- 1 pack fresh Stone Crop (Dolnamul, approx. 200g)

- 1 tsp gochugaru (Korean chili flakes, adjust to taste)

Step 1
We’re going to make a delicious Dolnamul Muchim, a vibrant spring vegetable salad! It’s a simple yet incredibly flavorful dish.
Step 2
First, wash the Dolnamul thoroughly under running water several times to remove any dirt or debris. It’s important to be thorough. After washing, soak the Dolnamul in a mixture of water and vinegar (about 1 cup water to 1 Tbsp vinegar) for a short while, then rinse again. This helps to keep the Dolnamul fresh and vibrant. Drain it well in a colander, ensuring most of the water is removed.
Step 3
If you’re making the Gochujang sauce from scratch, remember the golden ratio: 3:1:1! Combine 3 Tbsp gochujang, 1 Tbsp sugar, and 1 Tbsp vinegar in a small bowl. Mix well until smooth and there are no lumps. Stir until the sugar is dissolved for a perfectly balanced sauce.
Step 4
Now it’s time to mix the Dolnamul with the sauce. Place the drained Dolnamul in a mixing bowl. Add 1 tsp sesame oil and 1 tsp gochugaru. Then, add the 2 Tbsp of your prepared Gochujang sauce. Gently toss and mix the ingredients with your hands, like you’re ‘jajim’ (massaging) it. Be careful not to crush the delicate Dolnamul leaves – a gentle touch is key!
