A Revitalizing Winter Soup Made with Fresh Winter Radish and Squid
Experience the delightful, clear broth of this Squid and Radish Soup, a perfect dish for the winter season. Winter radish, known for its natural sweetness and refreshing taste, is the star ingredient, making this soup exceptionally flavorful. Tender squid and soft tofu add substance and a satisfying texture. We use anchovy sauce (myeolchi aekjeot) and convenient broth cubes (dongjeon yuksu) to achieve a deep, savory flavor with ease, ensuring even novice cooks can create a delicious pot of soup. This soup is ideal for pouring over rice, offering a warming and comforting meal on chilly days.
Main Ingredients- 1 Squid (cleaned and prepared)
- 100g Korean Radish (Mu, about 1/5 of a medium radish, sliced into 0.5cm thick half-moons)
- 1/2 block Firm Tofu (cut into bite-sized pieces)
- 2 Red Chili Peppers (seeds removed, sliced diagonally)
- 1 Tbsp Minced Garlic
Cooking Instructions
Step 1
First, prepare the squid by cleaning it thoroughly. Make crisscross (+) cuts on the inside of the squid body. These cuts help prevent the squid from curling up as it cooks and allow the flavors to penetrate better.
Step 2
Slice the prepared squid into bite-sized pieces. Avoid cutting them too small, as they will shrink further when cooked.
Step 3
Slice the Korean radish into 0.5cm thick half-moons. Cut the firm tofu into roughly 1.5cm cubes. Remove the seeds from the red chili peppers and slice them diagonally to add a vibrant color to the soup.
Step 4
In a pot, combine 4 cups of water and 3 broth cubes (or 2 cups of anchovy-kelp broth). Bring this mixture to a boil over high heat. This will form the flavorful base of your soup.
Step 5
Once the broth is boiling, add the sliced radish, tofu, and red chili peppers. Let them simmer. When the radish begins to turn translucent and tender, season the soup with 2 tablespoons of anchovy sauce for a deep, savory taste.
Step 6
When the radish is cooked through, add 1 tablespoon of minced garlic and the sliced squid. Squid cooks quickly and can become tough if overcooked. Simmer for just another moment (about 2-3 minutes) until the squid is tender and cooked through.
