A Special Birthday Menu: Delicious Shrimp Seaweed Soup, a Meat-Free Delight
This refreshing and clean-tasting shrimp seaweed soup uses shrimp instead of beef. It’s a light yet flavorful dish perfect for any occasion.
Ingredients- 40g dried seaweed
- 200g shrimp, peeled and deveined
- 1300ml rice water (water used to rinse rice)
- 2 Tbsp anchovy sauce
- 0.5 Tbsp salted shrimp paste
- 1 Tbsp cooking wine (like Cheongju)
Seaweed Seasoning- 2 Tbsp sesame oil
- 1 Tbsp soy sauce for soup (Guk-ganjang)
- 2 Tbsp sesame oil

Cooking Instructions
Step 1
Prepare all the ingredients for your delicious shrimp seaweed soup. Make sure the shrimp are thawed and washed clean.
Step 2
Soak the dried seaweed in cold water for about 30 minutes until it becomes soft and pliable. Stir it occasionally to prevent clumping.
Step 3
Gently rub the soaked seaweed with your hands to clean it, then squeeze out excess water thoroughly. Cut the seaweed into bite-sized pieces using scissors or a knife.
Step 4
Place the prepared seaweed in a clean bowl. Add 2 Tbsp of sesame oil and 1 Tbsp of soy sauce for soup (Guk-ganjang) for seasoning.
Step 5
Gently massage the seasoning into the seaweed with your hands until evenly distributed. Let it sit for about 10 minutes to allow the flavors to meld.
Step 6
If the shrimp are large, butterfly them or cut them in half lengthwise into bite-sized pieces. Add 1 Tbsp of cooking wine (Cheongju) to the shrimp and gently toss to marinate, helping to remove any fishy odor.
Step 7
Heat a pot over medium heat and sauté the seasoned seaweed for about 3 minutes until it softens and becomes fragrant. Pour in 1300ml of rice water. Bring it to a boil over high heat, then reduce to medium-low and simmer for 20 minutes. Add the marinated shrimp towards the end.
Step 8
Continue to simmer for another 5 minutes after adding the shrimp, until they turn pink and are cooked through. Season the soup with 2 Tbsp of anchovy sauce and 0.5 Tbsp of salted shrimp paste for a deep, savory flavor. For a clearer broth, use only the solid parts of the salted shrimp paste.
Step 9
Bring the soup to a rolling boil one last time. Your refreshing and flavorful shrimp seaweed soup is now ready to be enjoyed. Serve hot!
