Main Ingredients

  • 1 handful rehydrated seaweed (approx. 50g)
  • 1/4 onion (approx. 30g)
  • 1 green chili pepper (or 1/2 Korean chili pepper for extra heat)

Seasoning

  • 1 Tbsp red chili flakes (gochugaru)
  • 1.5 Tbsp soy sauce
  • 0.5 Tbsp sugar
  • 0.5 Tbsp plum extract (maesilcheong)
  • 1 Tbsp sesame oil
  • A pinch of toasted sesame seeds

Cooking Instructions

Step 1

First, rehydrate the dried seaweed by soaking it in water until fully softened. Rinse the rehydrated seaweed thoroughly under running water to remove any impurities. Squeeze out excess water firmly using your hands or a sieve. Cut the seaweed into bite-sized pieces, about 5cm long. Ensuring the seaweed is well-drained is key for the dressing to adhere properly and prevent a watery salad.

Step 1

Step 2

Thinly slice the onion into julienne strips. Finely chop the green chili pepper (or Korean chili pepper) after removing the seeds to add a pleasant spiciness. If you enjoy more heat, opt for Korean chili peppers; otherwise, regular green chili peppers work wonderfully.

Step 2

Step 3

In a large mixing bowl, combine the prepared rehydrated seaweed, sliced onion, and chopped green chili pepper. Add the seasoning ingredients: 1 Tbsp red chili flakes, 1.5 Tbsp soy sauce, 0.5 Tbsp sugar, and 0.5 Tbsp plum extract. Finally, drizzle in 1 Tbsp sesame oil for a nutty aroma and sprinkle with toasted sesame seeds.

Step 3

Step 4

Gently mix all the ingredients and seasonings together with your hands, as if massaging them. Ensure the dressing is evenly distributed throughout the seaweed. Taste and adjust the seasoning according to your preference, adding more soy sauce or sugar if needed, to achieve your perfect flavor balance.
