- Plum extract (Maesilcheong) 3 Tbsp
- Extra virgin olive oil 4 Tbsp
- Vinegar 1 Tbsp
- Gochugaru (Korean chili flakes) 1.5 Tbsp
- Toasted sesame seeds a pinch
- Minced garlic 1 Tbsp
- Fish sauce 2 Tbsp
- Plum extract (Maesilcheong) 3 Tbsp
- Extra virgin olive oil 4 Tbsp
- Vinegar 1 Tbsp
- Gochugaru (Korean chili flakes) 1.5 Tbsp
- Toasted sesame seeds a pinch
Cooking Instructions
Step 1
Prepare the sebalnamul by soaking it in a bowl filled with water and 1 tablespoon of vinegar for 10 minutes. This helps to refresh the greens and wash away any dirt. After soaking, rinse the sebalnamul 2-3 times under cold running water until thoroughly clean. Gently shake off excess water, or use a salad spinner for best results to ensure it’s well-drained. Proper draining is key to prevent a watery salad and help the dressing adhere well.
Step 2
Thinly slice the onion into slivers. Soak the sliced onion in cold water for about 10 minutes to mellow its sharp, pungent flavor. After soaking, drain the onion well, squeezing out any excess water.
Step 3
Now, let’s prepare the delicious dressing! Combine all the listed dressing ingredients in a small bowl. Taste the mixture and adjust the seasonings according to your preference. The fish sauce can vary in saltiness and sweetness depending on the brand, so tasting is important. This blend creates a perfect balance of savory, sweet, and tangy notes, similar to a fresh kimchi, to stimulate your appetite.
Step 4
In a larger mixing bowl, place the prepared sebalnamul and sliced onions. Sprinkle the gochugaru evenly over the vegetables. This step helps the chili flakes distribute more easily and gives the salad a beautiful color.
Step 5
Sebalnamul is very delicate, so when mixing, handle it gently with your hands, using a light, tossing motion. Avoid pressing down hard, which can bruise the greens. Add the dressing in 2-3 installments while gently tossing. This ensures the dressing coats everything evenly without crushing the ingredients. Taste as you go and adjust the seasoning with more fish sauce, vinegar, or a pinch of salt if needed, to perfectly suit your palate. Enjoy your delicious and healthy sebalnamul salad!
