Refreshing Seafood Noodle Soup (Haemul Kalguksu)
An Uniquely Simple Seafood Kalguksu
Delicious anytime and easy to make, this slurp-worthy seafood kalguksu will be a favorite. Enjoy the comforting and flavorful broth with chewy noodles.
Main Ingredients- 1 squid, cleaned and prepared
- 200g shrimp
- 1/4 onion, thinly sliced
- 1/4 carrot, thinly sliced
- 350g kalguksu noodles (fresh or dried)
- 1/2 stalk green onion, diagonally sliced
Seasoning & Broth- 4 cups kelp broth (made by soaking 10x10cm dried kelp in 4 cups water)
- 1 tsp minced garlic
- 1 tbsp soy sauce for soup (gukganjang)
- Salt to taste

Cooking Instructions
Step 1
First, prepare the seafood and vegetables. Clean the squid, remove the innards, and cut it into bite-sized pieces (about 1cm wide). Thinly slice the onion and carrot. Diagonally slice the green onion about 0.5cm thick for added fragrance.
Step 2
Rinse the shrimp under cold water and pat dry. You can trim the whiskers, or for a cleaner eating experience, peel the shrimp and devein them by making a shallow cut along the back. This preparation makes them easier to enjoy.
Step 3
Let’s make a deep and refreshing kelp broth. In 4 cups of cold water, soak a piece of dried kelp (about 10x10cm), making 3-4 slits with scissors to help release its flavor. Let it steep for about 30 minutes. Then, bring the water with the kelp to a gentle boil in a pot. Once it boils, remove the kelp, leaving you with a flavorful broth. This broth is key to the soup’s depth.
Step 4
Now, let’s start cooking the kalguksu. Pour the prepared kelp broth into a pot and bring it to a boil over high heat. Once the broth is rapidly boiling, add the kalguksu noodles, thinly sliced onion, and carrot. Stir gently to prevent the noodles from sticking together as they cook.
Step 5
When the soup comes back to a rolling boil, add the prepared squid, shrimp, and diagonally sliced green onions. Stir in 1 teaspoon of minced garlic and 1 tablespoon of soup soy sauce (gukganjang) for seasoning. Let it simmer, allowing the briny flavor of the seafood to meld with the other ingredients.
Step 6
Check if the noodles are cooked to your liking. Typically, kalguksu noodles cook in about 5-7 minutes. Once the noodles are done, season with salt and a pinch of black pepper to taste. Your delicious seafood kalguksu is ready to be enjoyed!
