  • 65g onion
  • 50g green onion (scallion)
  • 1.2L rice water (or plain water)
  • 20g chili peppers (red chili)
  • 1 teaspoon coarse sea salt (or salt to taste)

Properly cleaning the mussels is the first step to a delicious soup. Begin by rubbing the mussels against each other to remove any rough debris or dirt attached to their shells. Then, rinse them thoroughly under running water multiple times to ensure they are clean inside and out. Carefully remove the tough beard-like fibers (byssus) as well for a cleaner result.

Prepare the other ingredients for the soup. Finely mince the red chili peppers and Korean green chilies (if using) to infuse the broth with a pleasant spiciness and aroma. Slice the onion thinly or chop it roughly, and cut the green onion into diagonal pieces. Having all your ingredients prepped beforehand will make the cooking process much smoother.

Here’s a tip for enhancing the depth of your mussels soup broth: using rice water. The milky water leftover from rinsing rice before cooking creates a more savory and smoother broth. If making rice water is inconvenient, using clean plain water is perfectly fine. The natural freshness of the mussels will still yield a delicious soup.
