- Cabbage 150g
- Perilla Leaves (Kkaennip) 10 sheets
- Carrot 30g
- Onion 1/4 medium
- Ice cubes 7-8 pieces (adjust to preference)
Cooking Instructions
Step 1
Prepare 150g of sashimi-grade flatfish. Using fish specifically prepared for sashimi will ensure the freshest and most delicious result.
Step 2
Wash 150g of cabbage, pat it dry, and thinly julienne it. The crisp texture of the cabbage adds a delightful crunch to the mulhoe.
Step 3
Wash 10 perilla leaves, dry them thoroughly, and thinly julienne them. The distinct aroma of perilla leaves pairs wonderfully with the flatfish mulhoe.

Peel and wash the 30g carrot, then julienne it thinly. The vibrant colors will make the dish visually appealing.

Peel and thinly julienne 1/4 medium onion.

Add 6 Tbsp gochujang, 2 Tbsp gochugaru, 3 Tbsp sugar, 100ml vinegar, 1 Tbsp plum extract, and 1 tsp salt. Whisk everything together until well combined. Taste the broth and adjust the sweetness or tanginess by adding more sugar or vinegar to your liking. This is the key to a perfectly balanced flavor!

In a deep serving bowl, arrange the prepared flatfish, julienned cabbage, perilla leaves, carrot, and the soaked onion. Top generously with 7-8 ice cubes to ensure maximum coolness.
