First, lightly rinse the dried shredded pollack under cold water to remove any impurities. Be careful not to soak it for too long. Squeeze out any excess water. Heat 2 tablespoons of perilla oil in a pan over medium-low heat and stir-fry the pollack for 3-5 minutes until it becomes tender and fragrant. You’ll know it’s ready when it releases a nutty aroma.
Step 3
Peel the Korean radish and slice it thinly, about 0.5cm thick, or cut it into bite-sized cubes for easier eating. Autumn radish is naturally sweet and adds a wonderful freshness to the broth.

Cut the tofu into approximately 1.5cm thick pieces. Firm or pan-frying tofu holds its shape better in soup compared to silken tofu. Add the tofu to the pot along with the stir-fried pollack.
