Sandwich Ingredients
  • 1 fresh cucumber
  • 1 Tbsp coarse salt (for salting)
  • 3 Tbsp plain Greek yogurt
  • 1 Tbsp mayonnaise
  • 2 Tbsp jam (e.g., strawberry, raspberry, or to your taste)
  • 3 lettuce leaves
  • 2 slices of bread

Cooking Instructions

Step 1

First, prepare one cucumber. Using a vegetable peeler, carefully remove only the bumpy outer skin. Then, slice the cucumber diagonally and thinly, followed by a julienne cut (thin strips). Since julienned cucumber has a lot of water, it’s best to cut it as thinly as possible.

Step 2

Place the julienned cucumber in a bowl, add 1 tablespoon of coarse salt, and mix well. Let it sit for about 10 minutes. This process draws out excess moisture, resulting in a crispier texture.

Step 3

After 10 minutes, when you see that water has been drawn out of the cucumber, gently rinse it under running water twice to remove the salt. Drain the cucumber in a colander.

Step 4

To remove as much moisture as possible from the julienned cucumber, using a salad spinner is recommended. If you don’t have one, you can press the cucumber firmly with paper towels to squeeze out the water effectively.

Step 5

Add 3 tablespoons of plain Greek yogurt and 1 tablespoon of mayonnaise to the drained cucumber and mix gently to create the cucumber salad filling. It will have a creamy and refreshing taste.

Step 6

Now, it’s time to assemble the sandwich. Take two slices of bread and spread 1 tablespoon of jam evenly on one side of each slice. The jam adds sweetness and also acts as a barrier to prevent the bread from becoming soggy.

Place 3 washed and drained lettuce leaves neatly on top of the jam-spread bread. This adds a satisfying crunch and a fresh element.

Generously spread the prepared cucumber salad filling over the lettuce. It’s important to spread it evenly so the cucumber doesn’t clump together.
