- 1 Tbsp Lemon juice
- 1 Tbsp Plum extract (Maesil-cheong)
- 1 Tbsp Sesame oil
- 2 Tbsp Olive oil
- 4 Tbsp Perilla seed powder (Deulkkae-garu)
Cooking Instructions
Step 1
First, prepare your fresh vegetables. Wash 100g of cabbage, 50g of leafy greens, 50g of bell pepper, and 30g of onion thoroughly under running water. Then, thinly slice them into julienne strips. Feel free to use any leftover vegetables from your refrigerator.
Step 2
To reduce the pungent flavor of the sliced onion and enhance its crispness, soak it in cold water for about 5 minutes. This step mellows the onion’s sharpness while retaining its natural sweetness and crunch.
Step 3
Now, let’s make the delicious dressing! In a large bowl, combine 1/2 Tbsp minced garlic, 2 Tbsp soy sauce, 1/2 Tbsp oyster sauce, 2 Tbsp vinegar, 1 Tbsp lemon juice, 1 Tbsp plum extract, 1 Tbsp sesame oil, 2 Tbsp olive oil, and 4 Tbsp perilla seed powder. Whisk everything together with a whisk or chopsticks until well combined. Preparing the dressing in advance allows the flavors to meld beautifully.
Step 4
It’s time to cook the udon noodles. Fill a pot with plenty of water and bring it to a boil over medium heat. Once the water is vigorously boiling, add 1 serving of udon noodles. Stir gently to prevent the noodles from sticking together. Avoid overcooking; boil for only about 1 minute after the water returns to a boil.
Step 5
Drain the cooked udon noodles and rinse them quickly under cold running water to cool them down. Let them drain thoroughly in a colander. For an even cooler and chewier texture, chill the noodles in the refrigerator before using. This step is key to a refreshing salad.
Step 6
Arrange the drained onion, julienned cabbage, bell pepper, and leafy greens attractively on a large serving plate. Spreading them out evenly creates a visually appealing base for the salad.
Step 7
Carefully place the chilled udon noodles in the center of the prepared vegetables. Presenting the noodles centrally adds a beautiful focal point to the dish.
Step 8
Finally, generously drizzle the prepared dressing over the udon noodles and vegetables. Ensure the dressing coats everything evenly. Your refreshing cold udon noodle salad is now complete!
Step 9
Toss everything together gently with chopsticks to combine all the ingredients and dressing. Serve onto individual plates. This delicious cold udon salad makes for a satisfying meal and is also an excellent choice for a healthy diet. Enjoy your meal!
