  • 1.5 cups water
  • 2 servings udon noodles (as a substitute for kalguksu noodles)
  • A little kohlrabi
  • 1 Korean green chili pepper (Cheongyang)
  • A little red chili pepper
  • 5 perilla leaves (깻잎)
  • 1/3 Tbsp minced garlic

Cooking Instructions

Step 1

Let the broth from boiling the clams settle for a moment. Carefully pour the clear liquid from the top through a sieve lined with cheesecloth. This gentle straining process is key to achieving a clean and pure broth flavor, free from any sediment.

Step 2

Don’t worry if your refrigerator isn’t fully stocked! You can create a delicious meal with just the vegetables you have on hand. Today, we’re using thinly sliced kohlrabi. Add the thinly sliced kohlrabi to the strained clam broth and bring it to a boil. The subtle sweetness of the kohlrabi will infuse into the broth, adding a deeper layer of flavor.

Step 3

Meanwhile, on another burner, bring a pot of water to a rolling boil. We’ll be using store-bought udon noodles as a convenient alternative to traditional kalguksu noodles. Briefly blanch the udon noodles in the boiling water, then rinse them under cold running water to prevent sticking. This step ensures the noodles have a wonderfully chewy and springy texture.

Step 4

Once the broth is boiling vigorously, add the prepared udon noodles. Let it simmer for another moment, cooking for about 1-2 minutes until the noodles are well incorporated into the soup. Be careful not to overcook, as this can make the noodles mushy.

Finally, add the ingredients that will enhance the flavor. Stir in the minced garlic to boost the refreshing taste of the broth.
