Refreshing Clam and Seaweed Soup

I made seaweed soup after a long time. Instead of meat, I made this clam seaweed soup using semi-dried clams.

Seaweed soup is very, very simple. Stir-fry the soaked seaweed in sesame oil until fragrant, add broth or water, then add minced garlic! Season it carefully with soup soy sauce. If you feel there’s too much water, you can adjust the seasoning with salt.

Usually, many people make seaweed soup with beef, but this is a clam seaweed soup cooked with clams.

Ingredients

  • 1 cup semi-dried clam meat
  • 2 cups dried seaweed
  • 2 Tbsp sesame oil
  • 1 tsp thinly sliced garlic (optional)
  • 1 tsp minced garlic
  • 1 Tbsp soup soy sauce
  • Salt (to taste)

Cooking Instructions

Step 1

First, soak the dried seaweed in cold water for about 10 minutes until it becomes soft and pliable. Once softened, cut the seaweed into bite-sized pieces. In a pot, combine the prepared seaweed and semi-dried clam meat. Add 2 tablespoons of sesame oil and stir-fry over medium heat for about 2-3 minutes until fragrant. The seaweed and clams will become aromatic as they cook with the sesame oil.

After stir-frying the seaweed and clams, pour in plenty of broth (such as anchovy and kelp broth, rice water, or plain water). Bring to a boil over high heat, allowing the flavors to meld and the broth to become rich.

Once the soup starts boiling vigorously, add the sliced garlic (optional) and 1 teaspoon of minced garlic. The aromatic garlic will enhance the broth, making it even more refreshing and flavorful.

Now it’s time to season. It’s best to season after the broth has adequately simmered, rather than adding too much salt or soup soy sauce at the beginning, which can make it too salty or bland. Start by adding 1 tablespoon of soup soy sauce for umami. Taste the soup and, if needed, adjust the seasoning with salt. This method makes it easier to achieve the perfect balance of flavors.
