- 3 Tbsp sesame oil
- 4 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
Prepare 1L of anchovy broth, making it rich and flavorful. Season the broth with 1 tablespoon of soy sauce for soup, 1 tablespoon of tuna extract, and a pinch of salt. This seasoned broth will form the delicious base of your noodles.
Step 2
Wash the chives thoroughly and drain them well. Cut the chives into manageable lengths of about 4-5 cm. This size is perfect for mixing with the seasoning and for enjoying the bite.
Step 3
In a mixing bowl, combine the seasoning ingredients for the chives: 1 tablespoon of brown sugar, 2 tablespoons of regular soy sauce, 3 tablespoons of sesame oil, 4 generous tablespoons of toasted sesame seeds, and 5 tablespoons of red pepper flakes. Whisk everything together to create a vibrant and flavorful seasoning paste.
Step 4
Add the prepared chives to the seasoning paste. Gently toss the chives to coat them evenly, being careful not to overmix. You want to maintain their crisp texture.
Step 5
Bring a pot of water to a rolling boil. Add the noodles for 2 servings and stir gently to prevent them from sticking. Cook for approximately 3 minutes, without adding cold water during cooking, until they reach your desired tenderness. Cooking time can be adjusted to your preference.
Step 6
Immediately drain the cooked noodles and rinse them thoroughly under cold running water. Rub the noodles gently with your hands while rinsing to remove excess starch, ensuring a clean taste and bouncy texture. Once drained, twirl the noodles into individual portions for easy serving.
Step 7
Arrange the neatly twirled noodles in serving bowls. Generously top the noodles with the prepared seasoned chives. Don’t be shy with the chives; they are the star of this dish!
Step 8
Gently ladle the warm, seasoned broth around the edges of the noodles. Finally, sprinkle toasted seaweed flakes over the top according to your preference for an added layer of flavor and aroma.
Step 9
Your delicious Chive Noodles are now ready! Enjoy the delightful combination of crisp chives, savory broth, and perfectly cooked noodles. A truly satisfying and refreshing meal!
