Main Ingredients
  • 1 cucumber
  • 1 handful of chives (approx. 50-70g)

Seasoning
  • 1 Tbsp fish sauce (anchovy or sand lance)
  • 1 Tbsp soy sauce
  • 1.5 Tbsp gochugaru (Korean chili flakes, adjust to spice preference)
  • 1 Tbsp minced garlic
  • 1/2 Tbsp sesame seeds (toasted)

Cooking Instructions

Step 1

First, wash the cucumber thoroughly. You can peel it using a vegetable peeler for a lighter texture, or leave the skin on for extra crunch. Trim off both ends, then slice the cucumber in half lengthwise. Cut it diagonally into thin slices, about 0.5cm thick. Place the sliced cucumber into a large mixing bowl.

Step 2

Next, wash the chives and gently pat them dry. Cut the chives into segments about 2-3 cm long. Add the cut chives to the bowl with the cucumber.

Step 3

Now, let’s prepare the dressing. Add all the seasoning ingredients to the bowl with the cucumber and chives: 1 tablespoon of fish sauce, 1 tablespoon of soy sauce, 1.5 tablespoons of gochugaru, 1 tablespoon of minced garlic, and 1/2 tablespoon of toasted sesame seeds. Feel free to adjust the amount of gochugaru or fish sauce according to your taste preference.

Step 4

Gently toss everything together with your hands until the vegetables are evenly coated with the seasoning. Be careful not to overmix, as this can make the cucumber mushy. Mix just enough to combine. Once everything is well combined, your delicious and crisp chive and cucumber salad is ready to be served! Enjoy it immediately, or let it chill in the refrigerator for a short while to allow the flavors to meld.
