Introducing a refreshing and chewy seasoned salad made with the abundant flavor of the sea, Kkoshiraegi. This is a simple yet delicious side dish recipe that’s perfect for your dining table. It’s also an excellent choice for a diet meal and a delightful treat when you lack appetite.
Main Ingredients- Kkoshiraegi 180g (salt-cured)
- 1/4 Onion
- 1/2 Green chili pepper
- 1/2 Red chili pepper
- A little Green onion
Cooking Instructions
Step 1
Prepare the Kkoshiraegi: Salt-cured Kkoshiraegi can have clumps of salt attached. First, fill a bowl with cold water, add the Kkoshiraegi, and discard the water with the salt clumps. Repeat this process 3-4 times, rinsing thoroughly to remove excess salt.
Step 2
Soak and Blanch: After rinsing, soak the Kkoshiraegi in cold water for about 20-30 minutes to remove any remaining saltiness. Then, bring a pot of water to a boil and blanch the Kkoshiraegi for about 2 minutes. This step enhances the chewy texture of the Kkoshiraegi.
Step 3
Rinse Again: Immediately after blanching, transfer the Kkoshiraegi to a bowl of cold water and gently rub it between your hands 2-3 times. This removes residual heat and makes the texture even more firm and springy.
Step 4
Prepare Vegetables: Remove the seeds from the green and red chili peppers and thinly julienne them. Similarly, finely chop or julienne the green onion. This adds a beautiful color to the dish.
Step 5
Cut the Kkoshiraegi: Drain the Kkoshiraegi well. If the strands are too long, cut them into bite-sized pieces, about 5-7 cm long.
Step 6
Make the Dressing: In a bowl, combine 1 Tbsp fish sauce (or soup soy sauce), 0.5 Tbsp anchovy extract, 0.5 Tbsp minced garlic, 1 Tbsp vinegar, and 1 Tbsp plum syrup. Finally, add 0.5 Tbsp sesame oil and a sprinkle of toasted sesame seeds. Whisk everything together until well combined to create the dressing. (Tip: If you are sensitive to the sea flavor, adding a little cooking wine can help neutralize any fishy odors.)
Step 7
Mix Everything: Add the prepared Kkoshiraegi and julienned vegetables to the bowl with the dressing. Gently toss everything together to coat evenly, being careful not to mash the Kkoshiraegi. Your chewy and delicious Kkoshiraegi salad is ready!

Serving Suggestions: This Kkoshiraegi salad pairs wonderfully with a sweet and sour gochujang (chili paste) dressing. You can also add a little chili powder and gochujang for a spicier version, or dress it with soy sauce and serve it with nutritious rice.
