Cool and Spicy-Sweet Yeolmu Bibim Guksu to Beat the Heat
Introducing a simple and refreshing Yeolmu Bibim Guksu recipe that you can enjoy anytime, as long as you have well-fermented radish kimchi. It’s a simple yet incredibly appetite-stimulating summer delight!
Main Ingredients- 1/2 cucumber, thinly julienned
- 1/2 onion, thinly julienned, soaked in cold water for 10 minutes to remove pungency, then drained
- Generous amount of well-fermented Yeolmu Kimchi (young radish kimchi)
- 1 egg, hard-boiled and halved
- 2 servings of Jungmyeon (medium-thin noodles) or Somyeon (thin noodles)
Spicy and Sweet Bibim Sauce- 2 Tbsp Gochujang (Korean chili paste) (generous)
- 1 Tbsp Gochugaru (Korean chili flakes) (adds a clean spiciness)
- 2 Tbsp Jin Ganjang (Korean soy sauce) (enhances umami!)
- 1.5 Tbsp Sugar (sweetness can be adjusted)
- 2 Tbsp Vinegar (adds a refreshing tang)
- 1 Tbsp Sesame Oil (for nutty aroma)
- 1 Tbsp Toasted Sesame Seeds (for garnish)
- 1 Tbsp Minced Garlic (for a pungent flavor)
- 2 Tbsp Gochujang (Korean chili paste) (generous)
- 1 Tbsp Gochugaru (Korean chili flakes) (adds a clean spiciness)

Cooking Instructions
Step 1
First, prepare half an onion by thinly julienning it. Soaking the julienned onion in cold water for about 10 minutes removes its pungent taste, leaving only a crisp texture. After 10 minutes, drain the water thoroughly.

Hard-boil one egg. Place the egg in boiling water and cook for about 9-10 minutes until the yolk is completely set. Once boiled, cool the egg in cold water, peel it, and cut it in half.

Julienne half a cucumber thinly. Cucumber adds a refreshing and crisp element to bibim guksu. If you really enjoy cucumber, feel free to add a little more.

Now, let’s make the delicious sauce that will be the star of your bibim guksu! Start by adding 2 generous tablespoons of gochujang to a bowl.

Next, add 1 tablespoon of minced garlic for a pungent aroma.

Then, add one tablespoon of gochugaru for a clean, spicy kick.

Add 1.5 tablespoons of sugar to balance the sweet and sour flavors. You can adjust the sweetness to your preference.

For a refreshing tang that stimulates the appetite, add 2 tablespoons of vinegar.

Don’t forget to add 2 tablespoons of Jin Ganjang for an extra layer of umami.

Boil 2 servings of jungmyeon (or somyeon) in plenty of boiling water according to the package directions. Once cooked, drain the noodles in a colander, rinse them thoroughly under cold running water to remove excess starch, and drain completely. This ensures the noodles are springy and don’t become mushy.

In a large bowl, place the prepared sauce. Add the drained julienned onion first and mix thoroughly with the sauce. This allows the onion to absorb the flavors.

Add the julienned cucumber and the drained noodles to the bowl. Gently mix everything together with your hands or chopsticks until the noodles are evenly coated with the sauce. Be sure to mix well.

Plate the noodles beautifully. Top generously with the crisp and refreshing Yeolmu Kimchi. If you like, you can add a little of the kimchi juice for an even richer flavor.
