Main Ingredients- Buckwheat noodles (soba noodles), 2 servings (using individually wrapped portions makes it extra convenient)
- Red cabbage, a small amount (thinly shredded)
- Lettuce, 5 leaves (washed, dried, and torn into bite-sized pieces)
- Eggs, 2 (hard-boiled and ready)
Spicy & Tangy Sauce- Gochugaru (Korean chili flakes), 1 Tbsp
- Gochujang (Korean chili paste), 2 Tbsp
- Maesil-cheong (Korean plum extract), 3 Tbsp (adds sweetness and depth)
- Soy sauce (brewing soy sauce recommended), 2 Tbsp
- Apple vinegar, 2 Tbsp (for a bright, tangy flavor)
- Sesame oil, 1 Tbsp (for nutty aroma)
- Toasted sesame seeds, 1 Tbsp (for garnish and texture)
- Minced garlic, 1 Tbsp
- Gochugaru (Korean chili flakes), 1 Tbsp
- Gochujang (Korean chili paste), 2 Tbsp

Cooking Instructions
Step 1
Prepare the buckwheat noodles. If you’re using individually packaged noodles, they’re already portioned, making preparation even easier. Just follow the cooking instructions on the package.

Bring a generous pot of water to a rolling boil. Carefully add the buckwheat noodles, spreading them out so they don’t clump together. Gently stir with chopsticks as they cook to ensure they separate nicely.
Step 3
While the noodles cook, drain them and immediately rinse under cold running water. You can repeat this cold rinse a couple of times to enhance their chewy texture. Gently rub the noodles with your hands under the water to remove excess starch for an even better texture. Drain them very well.

Boil the eggs until hard-boiled. Place a steamer rack in a pot, add water, and carefully place the eggs on the rack. Cover and simmer for 9 minutes. Hard-boiled eggs make a perfect topping.

Make the delicious Bibim sauce. In a bowl, combine Gochugaru (1 Tbsp), Gochujang (2 Tbsp), Maesil-cheong (3 Tbsp), soy sauce (2 Tbsp), apple vinegar (2 Tbsp), and minced garlic (1 Tbsp). Mix everything thoroughly until well combined. Aim for a harmonious balance of sweet, sour, and spicy flavors.
Step 6
Wash and drain the shredded red cabbage and lettuce. Tear the lettuce into bite-sized pieces if necessary. Arrange the prepared vegetables attractively over the drained buckwheat noodles.
Step 7
Generously spoon about 2 Tbsp of the prepared Bibim sauce over the noodles and vegetables. Drizzle with 1 Tbsp of sesame oil and sprinkle with 1 Tbsp of toasted sesame seeds. Now, mix everything together thoroughly until all the noodles and toppings are evenly coated with the delicious sauce. Adjust the sauce quantity to your preference.
Step 8
