Main Ingredients- 500g cherry tomatoes
- 1/2 onion
- A few fresh basil leaves (adjust to taste)
Marinade Dressing- 1/2 tsp salt
- 2 Tbsp sugar
- 4 Tbsp lemon juice or vinegar (can adjust sourness)
- 4 Tbsp extra virgin olive oil

Cooking Instructions
Step 1
First, thoroughly wash 500g of fresh cherry tomatoes under running water. Remove all stems. Make a shallow cross-shaped incision on each tomato with a knife. This will make peeling much easier later on.
Step 2
Fill a pot with plenty of water and bring it to a rolling boil over high heat. Once the water is boiling, carefully add the incised cherry tomatoes and blanch them for about 15-30 seconds only. Be careful not to overcook, as they can become mushy.
Step 3
Immediately after blanching, transfer the tomatoes to a bowl of cold water to quickly cool them down. Drain them thoroughly in a colander to remove all excess water. Then, gently peel the skin starting from the cross-shaped incision. Removing the skin completely will ensure a tender texture.
Step 4
Finely mince 1/2 onion. If the onion pieces are too large, they can be distracting to the texture, so aim for very small pieces.
Step 5
Place the peeled cherry tomatoes in a mixing bowl. Sprinkle the finely minced onion evenly over the tomatoes.

Now it’s time to season. Add 1/2 tsp salt, 2 Tbsp sugar, 4 Tbsp lemon juice or vinegar, and 4 Tbsp of extra virgin olive oil for rich flavor to the bowl.

Finally, tear fresh basil leaves into large pieces with your hands and add them to the bowl. Tearing the basil by hand helps release its aromatic oils. Gently mix everything together with a spatula or spoon, ensuring all ingredients are well combined.
Step 8
Transfer the well-mixed basil tomato marinade to an airtight container and refrigerate. Chill for at least 30 minutes before serving. This allows the flavors to meld beautifully, resulting in a more delicious taste. Serving it cold enhances its refreshing quality.
