Quick & Easy Baechu Kimchi Noodles with Leftover Kimchi
Have some Baechu Kimchi left in your fridge? Don’t let it go to waste! Make this refreshing and clean-tasting Baechu Kimchi Noodles for a delightful late-night snack that your husband and kids will absolutely love. It’s simple but incredibly delicious!
Main Ingredients- 1 head of Baechu Kimchi
- Noodles for 4 servings
- Plenty of Baechu Kimchi brine
- 4 packets of commercial Naengmyeon broth
- A little Gim (seaweed flakes)
- A little sesame oil
- A little toasted sesame seeds
Cooking Instructions
Step 1
First, prepare one head of Baechu Kimchi. Chop not only the white parts but also the seasoned inner filling generously. This will add depth to the broth’s flavor.
Step 2
Also, prepare plenty of Baechu Kimchi brine separately. The tangy and refreshing brine is key to the deliciousness of this dish, so if your kimchi is juicy, that’s great. Otherwise, you can mix in a little fresh water.
Step 3
Take the commercial Naengmyeon broth packets from the freezer and thaw them completely in cold water. Once thawed, transfer the broth to a bowl and keep it chilled.
Step 4
Prepare noodles for 4 servings and boil them in simmering water. Once cooked, rinse them thoroughly under cold running water to remove excess starch, then drain them well in a colander. This will make the noodles wonderfully chewy and delicious.
Step 5
In a serving bowl, arrange the drained noodles attractively.
Step 6
Top the noodles with the chopped Baechu Kimchi and its filling. The crisp kimchi and flavorful filling will blend beautifully with the broth, adding a rich texture.

Pour about 2 ladles of the chilled commercial Naengmyeon broth over the noodles and kimchi. The cold broth will envelop everything, making it even more appetizing.
Step 8
Finally, add just enough of the prepared Baechu Kimchi brine to cover the noodles. Be careful not to add too much, or it might become too diluted.
Step 9
For the garnish, drizzle a little sesame oil, sprinkle some toasted sesame seeds, and top with roughly chopped Gim (seaweed flakes). Your refreshing Baechu Kimchi Noodles are now complete and ready to be enjoyed!
