It’s August, and the scorching heat continues relentlessly. Instead of the much-needed rain, we’re basking in intense heat! Wouldn’t a cool shower help cool down the asphalt and the air? So, I made a super simple Miyeok Naengguk using cold noodle broth, jasmine tea, and a splash of vinegar. This version features radish sprouts instead of cucumbers, hence ‘Miyeok Musun Naengguk’! The vinegar is added for that zesty, tangy flavor that cuts through the summer heat and also helps to dilute the strong savory taste of the cold noodle broth.
Ingredients- Dried seaweed 30g
- Radish sprouts 10g
- Commercial cold noodle broth 660g (2 packs)
- Jasmine tea (refrigerated) 200ml
- Vinegar 2 Tbsp
Cooking Instructions
Step 1
First, rehydrate the dried seaweed in cold water for about 10 minutes until it’s nicely softened. Once plumped, drain the excess water by placing it in a colander.
Step 2
Add the radish sprouts to the rehydrated seaweed. If you prefer a crunchier texture, you can also add thinly sliced cucumber – it’s a classic addition! Today, I’m using up the radish sprouts I have on hand.
Step 3
Now, pour in the two packs of cold noodle broth, 200ml of your refrigerated jasmine tea, and 2 tablespoons of vinegar for that essential tangy kick. Since the cold noodle broth can be quite savory, you can adjust the flavor by adding water or even green tea. I opted for jasmine tea as it’s always in my fridge. Stir everything together well to combine all the flavors.

And there you have it – a super easy and refreshing Miyeok Naengguk, perfect for a hot summer day! While traditionally made with julienned cucumber, the peppery bite of radish sprouts offers a delightful twist. The combination of the refreshing radish sprouts, the savory broth, and the tangy vinegar is incredibly satisfying. Serve this alongside your hot main dishes for a perfectly balanced and cooling meal. Enjoy! ^^
