Seasoning Ingredients- 3 tsp tuna extract
- Salt (to adjust seasoning)
- 2 Tbsp sugar
- 1 tsp minced garlic
- A little chopped green onion
- A little toasted sesame seeds
- 3 tsp tuna extract
- Salt (to adjust seasoning)
- 2 Tbsp sugar
- 1 tsp minced garlic
- A little chopped green onion
- A little toasted sesame seeds
Cooking Instructions
Step 1
Gently rinse the fresh sea grapes under running water. After washing, place them in a colander and drain completely. This step of thoroughly draining the water is the first secret to preventing a watery salad.
Step 2
Slice the cucumber thinly into matchsticks, and thinly slice the radish (either na-baek or julienne style). Sprinkle 1 tsp of coarse salt over the sliced cucumber and radish and let them sit for about 10 minutes to draw out moisture. This salting process helps to maintain the crisp texture of the vegetables and prevents excess water from forming in the salad.
Step 3
Cut the sea grapes into bite-sized pieces (about 5-7 cm long). Lightly sprinkle a small amount of coarse salt over them and let them sit for about 5 minutes. Be careful not to salt them for too long, as this can alter the delicate texture of the sea grapes. This step also helps to minimize the amount of liquid released from the sea grapes.
Step 4
Gently squeeze out the excess moisture from the salted sea grapes, cucumber, and radish by hand. Avoid squeezing too hard, as this can break down the ingredients. Gently pressing is key. Removing this moisture ensures the salad won’t be diluted and will retain its flavor.
Step 5
In a large bowl, combine the drained sea grapes, cucumber, and radish. Add all the seasoning ingredients (vinegar, tuna extract, sugar, minced garlic, chopped green onion). Gently mix everything together with your hands. Taste and adjust the seasoning with additional salt or sugar if needed.
Step 6
Transfer the deliciously mixed sea grape salad to a serving dish. Sprinkle with toasted sesame seeds for an extra nutty aroma. Enjoy your fresh and flavorful sea grape salad right away!
