  • 1 handful rehydrated seaweed (about 30-40g)
  • 1/2 cucumber (or 1 small cucumber)
  • 1/4 onion
  • 1/3 Korean chili pepper (optional, adjust spiciness)
  • 1 Tbsp minced garlic

Seasoning

  • 600ml cold water
  • 6 Tbsp rice vinegar
  • 4 Tbsp sugar
  • 1 Tbsp soy sauce or salt (adjust to taste)
  • 1 Tbsp toasted sesame seeds (for garnish)

Thoroughly rinse the rehydrated seaweed under running water, rubbing it with your hands. This removes any slimy texture, ensuring a clean taste. Squeeze out excess water before preparing.

Slice the cucumber thinly into half-moons. Thinly slice the onion and soak it in cold water for about 5 minutes to remove its sharp taste, then drain. Finely chop the Korean chili pepper. (Omit or reduce the amount if you prefer less spice.)

In a large bowl, combine the prepared seaweed, sliced cucumber, onion, minced garlic, and the seasoning ingredients (rice vinegar, sugar, soy sauce or salt). Gently mix by hand, ensuring the seasonings are evenly distributed.

Add the finely chopped Korean chili pepper and mix lightly. The mild spiciness of the chili pepper will complement the sweet and tangy flavors, further awakening your appetite. (You can omit this if you don’t want any heat.)
