Main Ingredients

  • 1 medium Daikon radish
  • 1 stalk Green onion
  • 1 Tbsp Coarse sea salt (for salting the radish)

Seasoning and Broth

  • 1/2 cup Anchovy-Kelp Broth
  • 1/2 Tbsp Fish sauce or Soy sauce (for adjusting taste)
  • 1/2 Tbsp Minced garlic
  • 1 Tbsp Perilla oil (or sesame oil)
  • 1 Tbsp Toasted sesame seeds

Cooking Instructions

Step 1

First, wash the medium-sized daikon radish thoroughly under running water, without peeling it. Ensure all dirt is removed.

Step 1

Step 2

Slice the washed daikon radish thinly, about 2-3mm thick. Slicing it too thinly might cause it to break apart during cooking, so maintain a moderate thickness.

Step 2

Step 3

Now, julienne the sliced daikon radish. Cut it slightly thicker than you would for kimchi to ensure it retains a pleasant texture and doesn’t become mushy. Aim for about 0.5cm thickness.

Step 3

Step 4

Place all the julienned daikon radish into a wide pan or wok. Add 1/2 Tbsp of coarse sea salt and gently massage it into the radish with your hands for about 5 minutes. This process draws out moisture, helping to keep the radish crisp.

Step 4

Step 5

While the radish is salting, prepare 1/2 cup of anchovy-kelp broth. Pour the broth over the salted radish, cover the pan, and bring to a boil over high heat for about 5 minutes. *Cooking quickly over high heat prevents the radish from becoming too soft and helps maintain its texture. Adjust cooking time based on the thickness of your radish slices.

Step 5

Step 6

After boiling for about 5 minutes, remove the lid. Adjust the seasoning with fish sauce or soy sauce if needed. Then, add 1/2 Tbsp of minced garlic and 1 Tbsp of perilla oil (sesame oil is also a good alternative).

Step 6

Step 7

Wash the green onion and slice it diagonally into about 0.5cm thick pieces. It’s good to use a mix of the white and green parts.

Step 7

Step 8

Add the sliced green onions and 1 Tbsp of toasted sesame seeds to the simmering radish. Stir everything together gently and cook for another 1-2 minutes until well combined. Your delicious braised daikon radish is now ready!

Step 8

Step 9

The finished dish has a wonderfully crisp texture, characteristic of daikon radish, and it holds its shape beautifully while being perfectly cooked. It looks as appetizing as it tastes.

Step 9

Step 10

You can taste the natural subtle sweetness and umami of the daikon radish, enhanced by the hint of fish sauce for a richer flavor. Its refreshing and savory taste pairs exceptionally well with rice. Enjoy your meal!
