A super simple soup recipe perfect for a hangover cure after drinking.
Main Ingredients- 1/2 bag bean sprouts (approx. 100-150g)
- 1.5 handfuls well-fermented kimchi (approx. 200g)
- 8 dried anchovies for broth
- 1.5L water
Seasoning & Aromatics- 1 Tbsp soup soy sauce or fish sauce
- A pinch of minced garlic (to taste)

Step 1
The secret to a refreshing and spicy bean sprout kimchi soup lies in simmering well-fermented kimchi with anchovy broth. This method draws out a deeply refreshing and spicy flavor, resulting in a soup that deserves a thumbs-up.

Finely chop the kimchi. If you prefer less dishes, you can use scissors to cut it directly into a small bowl, making cleanup easier. If your kimchi is a bit too sour, you can rinse it lightly under running water to adjust the tanginess.

While you’re chopping the kimchi, prepare the anchovy broth in a pot. Add 1.5L of water and about 8 dried anchovies for broth. Bring it to a boil. Removing the insides of the anchovies will result in a clearer broth.

Once the water is boiling vigorously, add the chopped kimchi and let it simmer for a bit longer. If you rinsed the kimchi, you can add some kimchi juice or a pinch of red pepper powder for a vibrant color. Personally, I find using kimchi juice adds a deeper, richer flavor!

After simmering the kimchi until its flavors have melded, add the bean sprouts. Cook for another 3-4 minutes until the bean sprouts are tender but still have a slight crispness. Be careful not to overcook them, as they can become mushy.

Finally, taste the soup and season with 1 tablespoon of soup soy sauce or fish sauce if it’s not salty enough. For an extra boost of umami, feel free to add a pinch of minced garlic.
