This beef and bean sprout soup is perfect for warming you up on a chilly day. Packed with nutrition from fresh bean sprouts and tender beef, its clear, refreshing broth will bring warmth to any cold weather.
Main Ingredients- Beef for soup cuts, 400g

- Radish, 1/5 medium (approx. 150g)
- Green onion, 1/2 stalk
- Beef bouillon cube, 1 piece (or 1L beef broth)

- Fish sauce (anchovy or sand lance), 1/2 Tbsp
- Minced garlic, 1 Tbsp
- Black pepper, 1/2 tsp
- Seasoned salt, a pinch
- Salt, a pinch (to adjust seasoning)

Cooking Instructions
Step 1
First, prepare 400g of beef suitable for soup cuts. Rinse it briefly under cold running water to remove any blood. Patting it dry with paper towels will help achieve a clearer broth.
Step 2
Take a deep pot and heat 1-2 tablespoons of sesame oil over medium heat. We’ll start stir-frying once the sesame oil is lightly warmed.
Step 3
Add the drained beef to the pot and stir-fry until the surfaces are cooked through. Cooking the beef thoroughly will enhance the depth of the broth’s flavor.
Step 4
Once the beef surfaces turn white, add the thinly sliced radish (about 150g) and sauté them together. Stir-frying the radish in oil will make the soup taste even more refreshing.
Step 5
When the beef and radish are sufficiently sautéed, add 1 tablespoon of soup soy sauce and 1 tablespoon of minced garlic. Stir-fry together for another 1-2 minutes. This step helps the seasonings to be well absorbed by the beef and radish, greatly improving the flavor.
Step 6
Now, pour in 1L of water and add 1 beef bouillon cube (or 1L of pre-made beef broth). Bring to a boil over high heat, then reduce to medium heat and simmer for about 5-7 minutes to extract the broth’s flavor.

As the soup begins to boil, use a skimmer or sieve to carefully remove any foam or impurities that rise to the surface. This is crucial for a clean and refreshing broth.
Step 8
After removing impurities, add the washed bean sprouts (300g) to the pot. Cover with a lid and simmer for about 5 minutes until the bean sprouts are cooked. Be careful not to overcook them, as they can develop an unpleasant raw taste.
Step 9
Finally, add the diagonally sliced green onion (1/2 stalk) and the remaining 1 tablespoon of soup soy sauce, 1/2 tablespoon of fish sauce, and 1/2 teaspoon of black pepper. Taste and adjust seasoning with a pinch of seasoned salt or regular salt if needed. Simmer for a moment longer, and your delicious beef and bean sprout soup is ready!
