Main Ingredients- 1 packet (4g) Agar-Agar powder for jelly
- 1 packet store-bought Buckwheat Noodle Soup base
- 50g Kimchi (fermented cabbage)
- 1/4 Cucumber

Step 1
First, gather all the ingredients needed for the dish. Prepare 1 packet (4g) of agar-agar powder for making the jelly, 1 packet of store-bought buckwheat noodle soup base, 50g of well-fermented kimchi, 1/4 cucumber, and for the seasoning and garnish: 1/2 Tbsp sugar, 1 Tbsp sesame oil, 1/2 tsp black pepper, and 1 Tbsp toasted sesame seeds.
Step 2
Wash the cucumber thoroughly, remove the seeds, and julienne it thinly. These julienned cucumbers will add a crisp texture to your noodle soup.
Step 3
Similarly, remove the excess pulp from the kimchi and julienne it thinly. In a bowl, combine the julienned kimchi with 1/2 Tbsp sugar, 1 Tbsp sesame oil, 1/2 tsp black pepper, and 1 Tbsp toasted sesame seeds. Gently mix and knead to allow the seasonings to be well absorbed. This seasoned kimchi will add a sweet and tangy flavor.

Now, it’s time to make the agar-agar jelly. In a pot, pour 500ml of clean cold water and add 1 packet (4g) of agar-agar powder. Whisk well with a balloon whisk to dissolve any lumps. Once it starts boiling, continue to cook for another 1-2 minutes until the agar-agar is completely dissolved and the liquid is clear. Then, turn off the heat. Skim off any foam that forms during cooking for a cleaner jelly.

Pour the prepared agar-agar liquid into a shallow dish or mold and let it cool completely at room temperature. Then, refrigerate for at least 2-3 hours, or until firmly set.
