Refreshing Pollack Roe Stew (Al Tang)
Enjoy a wonderfully refreshing and deeply flavorful Al Tang made with pollack roe! This simple stew is incredibly easy to make and tastes delicious. Feel free to use any vegetables you have on hand. Tip: Cutting the pollack roe into small pieces can make the soup cloudy. It’s best to make just a few slits or add them whole for a clearer and tastier stew.
Stew Ingredients- 300g Pollack Roe (Myeongnan jeot)
- A small piece of Radish (about 1/4 medium radish)
- 1 Shiitake Mushroom
- 1/2 Zucchini
- 1/2 stalk Scallion
- 1/4 Onion
- 1 tsp Minced Garlic
- Frozen Cocktail Shrimp (optional)
Broth Ingredients- 4 cups Anchovy Broth (or Dashi)
- 4 cups Anchovy Broth (or Dashi)
Cooking Instructions
Step 1
Prepare all vegetables: Wash the radish, shiitake mushroom, zucchini, and onion thoroughly. Slice them into bite-sized pieces (thin slices or julienned). Slice the scallions diagonally.
Step 2
In a pot, pour in 4 cups of anchovy broth. Add the sliced radish and bring to a boil over high heat. Cook until the radish becomes translucent and tender, allowing its flavor to infuse the broth.
Step 3
Once the radish starts to cook, add the shiitake mushroom, zucchini, and onion. Let them simmer together. The vegetables will release their natural sweetness, making the broth even more refreshing. (If using cocktail shrimp, add them at this stage.)
Step 4
When the vegetables are tender, add the pollack roe. To prevent the soup from becoming cloudy, either add the roe whole or make a few shallow slits with a chopstick before adding. Simmer just long enough for the roe to cook through.
Step 5
Finally, add the sliced scallions and minced garlic. Bring to a gentle boil again. Sprinkle a pinch of black pepper to finish. This creates a deep and refreshing pollack roe stew. The pollack roe is naturally salty, so additional seasoning is usually not needed. If it tastes too bland, you can add a little soy sauce or salt to adjust the flavor.
