Makguksu Ingredients- Buckwheat noodles, for 2 servings
- 1 handful fresh cabbage (approx. 1/4 head)
- 1 bunch aromatic perilla leaves (approx. 10 leaves)
- 1/2 handful crisp carrots (approx. 1/4 carrot)
Sweet and Spicy Bibim Sauce- 3 Tbsp savory soy sauce (Jinganjang)
- 2 Tbsp sweet oligodang (or sugar)
- 1 Tbsp flavorful minced garlic
- 1/2 cup fizzy carbonated drink (sugar-free recommended)
- 2 Tbsp water, for smoothness
- 2 Tbsp chili powder (Gochugaru) (spicy type can be used as preferred)
- 1 Tbsp sweet and spicy red chili paste (Gochujang)
- 3 Tbsp savory soy sauce (Jinganjang)
- 2 Tbsp sweet oligodang (or sugar)
- 1 Tbsp flavorful minced garlic
- 1/2 cup fizzy carbonated drink (sugar-free recommended)
- 2 Tbsp water, for smoothness
- 2 Tbsp chili powder (Gochugaru) (spicy type can be used as preferred)
- 1 Tbsp sweet and spicy red chili paste (Gochujang)
Cooking Instructions
Step 1
First, prepare the fresh vegetables. Wash the cabbage, perilla leaves, and carrots thoroughly and pat them dry. Thinly shred the cabbage. Roll the perilla leaves and shred them finely to preserve their aroma. Julienne the carrots thinly as well. Shred all vegetables to make them visually appealing.
Step 2
Now it’s time to make the delicious sauce that will determine the flavor of your makguksu. Start by adding 1 tablespoon of minced garlic to the sauce bowl for added flavor.

Next, add 3 tablespoons of soy sauce for a savory depth. While you can use regular soy sauce, Jinganjang (dark soy sauce) offers a richer and more profound taste. Adjust the amount based on the saltiness of your soy sauce.

Add 2 tablespoons of oligodang for sweetness. You can also use sugar, or a mixture of oligodang and sugar for a more balanced sweetness. Stir lightly to combine the ingredients.

Add 2 tablespoons of chili powder for a spicy kick. If you prefer it extra spicy, consider using Cheongyang chili powder or increasing the amount of chili powder. This will add a fiery element.
Step 6
Incorporate 1 tablespoon of gochujang for a sweet and tangy flavor, and then pour in 1/2 cup of carbonated drink to give the sauce its smoothness and fizzy character. Using a sugar-free or zero-calorie carbonated drink allows you to create a delicious sauce without the added calories. Gently stir everything together without causing too much foam, ensuring all ingredients are well combined.
Step 7
Prepare the buckwheat noodles by boiling 2 servings in boiling water. Buckwheat noodles can easily become mushy or clump together, so refer to the package instructions for cooking time, but gently loosen them with chopsticks while cooking.
Step 8
Once the buckwheat noodles are cooked, drain them in a colander, discarding the hot water. Immediately rinse them thoroughly under cold water to make the noodles firm and chewy. This process removes excess starch and enhances their texture. Drain the noodles completely, then add a generous amount of the prepared bibim sauce and mix well with the shredded vegetables. You can also add ingredients like cucumber or kimchi according to your preference. Mix everything together for a delicious and refreshing bibim makguksu!
