Cooling Bean Sprout Soup Made with Rich Broth!
I made bean sprout soup while preparing the broth. I ate two bowls of rice this morning. Let’s make it deliciously~
Ingredients- 180g bean sprouts
- 1 onion
- 2 Tbsp salted shrimp (saeujeot)
- 3 Korean green chilies
- 2 red chilies
- 1/2 Tbsp minced garlic
- 1 tsp salt (for seasoning)
- 1L anchovy broth
Cooking Instructions
Step 1
Rinse the bean sprouts thoroughly and let them drain. Prepare the anchovy broth and chop the vegetables and mince the garlic. Having all your ingredients ready before you start will make the cooking process much smoother.
Step 2
Bring the prepared anchovy broth to a rolling boil over high heat. Once boiling, add the rinsed bean sprouts and cook for a few minutes. Skim off any foam that rises to the surface to ensure a clear and clean broth.
Step 3
Add the minced garlic and sliced onion to the soup. Season with 2 tablespoons of salted shrimp for a deep umami flavor, and adjust the taste with 1 teaspoon of salt if needed.
Step 4
Add the diagonally sliced Korean green chilies and red chilies. Reduce the heat to medium and simmer for about 5 minutes. The chilies will infuse the soup with a fresh, spicy aroma and flavor.
