A Refreshing and Crunchy Radish and Winter Cabbage Salad to Revive Your Appetite
Kimchi is delicious, but sometimes a light and fresh geotjeori (fresh kimchi salad) is just what you crave. This recipe uses radishes and fresh winter cabbage from the fridge to create a wonderfully refreshing and crunchy salad. The addition of lemon syrup doubles the zesty flavor, bringing back even the most elusive appetite. It’s a perfect quick side dish for when you want something bright and flavorful without the fuss of traditional kimchi.
Main Ingredients- 300g radish
- 110g winter cabbage
- 1/3 stalk green onion
Seasoning- 1 Tbsp red chili flakes
- 1 Tbsp soy sauce
- 1 Tbsp fish sauce
- 1 Tbsp vinegar
- 1 Tbsp minced garlic
- 2 Tbsp plum syrup
- 1 Tbsp lemon syrup (including minced lemon)
- 1 Tbsp sesame oil
- 1/2 Tbsp sesame seeds
- A pinch of fine salt
- 1 Tbsp red chili flakes
- 1 Tbsp soy sauce
- 1 Tbsp fish sauce
- 1 Tbsp vinegar
- 1 Tbsp minced garlic
- 2 Tbsp plum syrup
- 1 Tbsp lemon syrup (including minced lemon)
- 1 Tbsp sesame oil
- 1/2 Tbsp sesame seeds
- A pinch of fine salt
Cooking Instructions
Step 1
First, wash and peel the radish, then cut it into thin matchsticks. Slice the green onion diagonally. For the winter cabbage, remove any wilted outer leaves and select the small, tender yellow inner leaves for the best texture. Cut the winter cabbage into bite-sized pieces.
Step 2
Finely mince the lemon from the lemon syrup, removing any seeds. This will be added to the dressing to enhance the refreshing citrus flavor.
Step 3
In a large bowl, combine the julienned radish, prepared winter cabbage, and diagonally sliced green onion. Add 1 Tbsp each of red chili flakes, soy sauce, fish sauce, vinegar, and minced garlic. Next, add 2 Tbsp of plum syrup and a pinch of fine salt to season. Gently mix everything with your hands until well combined. Be careful not to overmix, as this can make the winter cabbage mushy.
Step 4
To the mixed ingredients, add the minced lemon (including the lemon pieces), 1 Tbsp of sesame oil, and 1/2 Tbsp of toasted sesame seeds for nutty flavor. Toss gently again to combine. The combination of lemon’s tanginess and sesame oil’s richness creates a wonderfully balanced flavor.
Step 5
Transfer the well-mixed geotjeori to a serving dish. It’s delicious served immediately, or you can chill it in the refrigerator for a short while to enjoy it even more refreshing.
