I made a soup using squid from the freezer. Since it shouldn’t just be squid, I added radish and seasoned it with anchovy sauce and Korean soy sauce to quickly make this squid and radish soup. In the past, we used to make this squid and radish soup often… I wonder if people nowadays know about it ^^ You can make a simple meal with this, and it’s great for hangovers because it’s so refreshing. This healthy squid and radish soup is packed with taurine.
Ingredients- 3 squid (thawed)
- 1 segment of radish, about 5cm long
- 200g firm tofu
- 1 Tbsp minced garlic
- 3 Tbsp chopped green onion
- 1 tsp Korean soy sauce
- 1 tsp anchovy sauce
- 2 packs of seafood broth base
- 1 pack of dried pollack/kelp broth base
- 1.2 liters water
Cooking Instructions
Step 1
Slice the radish into thin, bite-sized pieces (na-bak-style). Aim for about 0.3 cm thickness for even cooking.
Step 2
Ensure the 3 squid are fully thawed. Give them a quick rinse under cold water to clean them.
Step 3
Cut the tofu into roughly 1.5 cm cubes. Avoid cutting them too small, so they hold their shape during cooking.
Step 4
For the squid, after rinsing, cut the body into 1 cm thick rings and the tentacles into manageable pieces. Remove the beak and the hard inner part. (If squid preparation is difficult, consider buying pre-cleaned squid from the market.)
Step 5
In a pot, combine the sliced radish, prepared squid, and cubed tofu. Add 1 Tbsp minced garlic, 1 tsp Korean soy sauce, and 1 tsp anchovy sauce for initial seasoning. For the broth, add 2 seafood broth packs and 1 dried pollack/kelp broth pack to enhance the depth of flavor.
Step 6
Pour in 1.2 liters of water. Bring the soup to a rolling boil over high heat. As the soup boils, skim off any foam or impurities that rise to the surface to ensure a clean and clear broth.
Step 7
The broth will take on a reddish hue as the squid releases its juices, creating a rich and refreshing flavor profile. Once boiling, reduce the heat to medium-low and simmer for at least 10 minutes, allowing the flavors of the radish and squid to fully meld.
Step 8
Finally, add the chopped green onions and simmer for another minute. Your refreshing and clear squid and radish soup is now ready! It’s perfect for a hangover cure or a warming dish on a cold winter day, offering a delightful blend of refreshing and rich flavors.
