Keeping a pack of bean sprouts in the fridge allows you to conveniently use just the amount you need. This recipe uses shrimp paste for seasoning, which adds a deep, savory flavor that makes it incredibly satisfying. Main Ingredients- 3 handfuls of fresh bean sprouts (approx. 300g)
- 4 cups of water (800ml)
Cooking Instructions
Step 1
First, thoroughly wash the bean sprouts under running water. Gently shake them to remove any dirt without breaking the heads. Drain well. Place 3 handfuls of the cleaned bean sprouts evenly in a pot.
Step 2
Next, prepare the ingredients for the broth’s flavor. Separate the white and green parts of the green onion. Slice the white parts diagonally into about 0.5cm thick pieces and sprinkle them evenly over the bean sprouts. Then, add 1/2 Tbsp of chili powder and 1/2 Tbsp of minced garlic.

For the soup’s savory depth, add 1 Tbsp of shrimp paste. It’s best to finely mince the shrimp paste so it dissolves smoothly in the broth. Add the minced shrimp paste to the pot, then pour in 4 cups (800ml) of fresh water. Bring to a boil over high heat.
Step 4
Once the soup starts boiling, reduce the heat to medium and simmer for about 5-7 minutes, or until the bean sprouts are tender yet crisp. Just before the bean sprouts are fully cooked, thinly slice the green parts of the green onion diagonally and add them to the pot. Let it simmer for another 1-2 minutes to allow the fragrant green onion flavor to infuse the broth. Your delicious shrimp paste and bean sprout soup is ready! Enjoy it hot.
