Introducing a simple and delicious recipe for refreshing agar-agar jelly cold soup that you can enjoy at home anytime. The delightful texture of the chewy agar-agar, the crispness of the vegetables, and the sweet and sour broth create a perfect dish to beat the heat. It’s also a great option for a diet meal and is easy for anyone to follow.
Main Ingredients- Agar-agar jelly (Umutgari) 230g
- Water 250ml
- Store-bought naengmyeon (cold noodle) broth or dongchimi (radish kimchi) broth 294ml
- Xylose sugar 1 Tbsp
- Plum extract 1 Tbsp
- Sesame seeds 1/3 Tbsp
- Fine salt to taste
Cooking Instructions
Step 1
Gently rinse the agar-agar jelly under running water to remove any impurities. Then, slice it thinly into strips about 0.5 to 0.7 cm thick for easy eating.
Step 2
Feel free to use various vegetables you have in your refrigerator for the cold soup’s toppings. Cucumbers, in particular, pair wonderfully with the chewy agar-agar due to their crisp texture, so be sure to include them!
Step 3
Thinly julienne all the prepared vegetables, including carrots, red cabbage, and cucumber. Finely chop the scallions to add a fragrant aroma.
Step 4
In a large bowl, combine all the julienned vegetables (carrots, red cabbage, cucumber) and the chopped scallions.
Step 5
Tip! To minimize dishwashing, instead of preparing the broth separately from the start, you can directly pour the broth into the bowl with the julienned ingredients and mix them together. I conveniently used one pack of store-bought dongchimi broth.
Step 6
Pour 250ml of water into the broth (or store-bought broth) and add 1 Tbsp of xylose sugar to adjust the sweetness. (It’s recommended to start with 1/2 Tbsp and add more to taste. I used a total of 1 Tbsp.)
Step 7
Add 1 Tbsp of plum extract for a refreshing tang. Plum extract provides sweetness and a subtle flavor, acting as an alternative to sugar.
Step 8
Season with a pinch of fine salt to taste. Since store-bought dongchimi broth often has its own seasoning, it’s important to add salt gradually while tasting. Thanks to the store-bought dongchimi broth, it was perfectly tangy and sweet without needing any extra vinegar.
Step 9
Finally, sprinkle some sesame seeds over the finished cold soup for an added nutty flavor. Enjoy your delicious and refreshing agar-agar jelly cold soup!
