Refreshing Abalone and Seaweed Soup (Miyeokguk) Recipe
How to Make Delicious Abalone and Seaweed Soup
A simple and refreshing abalone seaweed soup made with fresh abalone. This dish is packed with flavor and nutrients, perfect for a satisfying meal.
Main Ingredients- 10 fresh abalones
- 4 handfuls dried seaweed, rehydrated (approx. 200g)
- 3 cloves garlic
- 1 piece dried kelp (5x5cm)
Seasoning- 3 Tbsp anchovy sauce
- 1 Tbsp sesame oil
- 3 Tbsp anchovy sauce
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
Thoroughly clean the fresh abalones. Scrub the shells under running water with a brush. Using a kitchen knife or a paring knife, carefully slide it between the shell and the meat to separate them. This step ensures a clean flavor.
Step 2
Cut the rehydrated seaweed into bite-sized pieces (about 2-3cm wide). In a pot, combine the prepared seaweed, kelp, and thinly sliced garlic. Add 3 Tbsp of anchovy sauce and 1 Tbsp of sesame oil. Stir-fry over medium-high heat for about 2-3 minutes until the ingredients are well combined and fragrant. This helps to deepen the savory flavors.
Step 3
Pour 1 liter (about 5 cups) of cold water into the pot with the stir-fried ingredients. Bring to a boil over high heat. Once it starts boiling, reduce the heat to low and let it simmer gently. This allows the seaweed to become tender and the abalone to release its sweet, oceanic flavor into the broth.
Step 4
The resulting soup is incredibly refreshing and flavorful! The abalones were small enough to cook whole, making them wonderfully tender and chewy. This soup is perfect for enjoying with a bowl of rice – a truly satisfying dish!
