Ingredients

  • 1 Dongchimi radish
  • 4 handfuls of shredded radish (from Dongchimi)
  • 2 Tbsp Gochugaru (Korean chili powder)
  • 1/2 Tbsp minced garlic
  • 1 stalk scallion, finely chopped
  • 2 Tbsp vinegar
  • 2 Tbsp maesilcheong (plum extract)
  • 1 Tbsp toasted sesame seeds
  • 1/2 Tbsp sesame oil

Cooking Instructions

Step 1

First, prepare the Dongchimi radish. If there’s too much brine, the radish might get submerged, so drain some of the liquid or use a sieve to collect just the radish. We’ll use this radish to make a delicious salad.

Wash the prepared Dongchimi radish (1 piece) thoroughly. Then, shred it thinly and finely. Thinly shredded radish absorbs seasonings better and has a pleasant texture.

Rinse the shredded radish briefly under cold running water. This helps remove any impurities and enhances its crispiness. After rinsing, place it in a sieve to drain the water.

It’s crucial to squeeze out as much water as possible from the radish by hand. Excess water will make the salad watery and prevent the seasonings from being absorbed well. Aim for about 4 handfuls of squeezed radish.

Place the 4 handfuls of squeezed radish into a bowl. Start by adding 2 tablespoons of gochugaru (Korean chili powder) to give it color. Adding the chili powder first at this stage helps achieve an even color.

Gently mix the gochugaru into the radish until it’s evenly coated. It might feel a bit stiff before adding other seasonings, but mix them in well.

Now, add all the remaining seasoning ingredients. This includes 1/2 tablespoon of minced garlic, 1 stalk of finely chopped scallion, 2 tablespoons of vinegar for a tangy flavor, 2 tablespoons of maesilcheong (plum extract) for sweetness, 1 tablespoon of toasted sesame seeds for nuttiness, and finally, 1/2 tablespoon of sesame oil for aroma.

Mix everything vigorously with your hands until all the seasonings are well combined and evenly distributed throughout the radish. If you let it sit for a bit before serving, the flavors will meld even further, resulting in a delicious Dongchimi radish salad.
