Main Ingredients

  • 300g dried radish greens (siraegi)
  • 200g clams
  • 100g soybean sprouts
  • 1/2 large leek
  • 2 Korean green chilies
  • 1 red chili pepper

Seasoning & Broth

  • 2 Tbsp soybean paste (doenjang)
  • 1 Tbsp red chili flakes (gochugaru)
  • 0.5 Tbsp minced garlic
  • 1 Tbsp fish sauce (or soy sauce for soup)
  • 1 Tbsp soy sauce for soup
  • Pinch of black pepper
  • 1.2 liters broth (anchovy or vegetable stock recommended)

Cooking Instructions

Step 1

Prepare the fresh clams. Soak them in lightly salted water to purge any sand. Boil them in water until they open, then remove the clams. Strain the clam broth to get a clear liquid.

Step 1

Step 2

Rinse the pre-boiled dried radish greens thoroughly and squeeze out excess water. Wash the soybean sprouts. Slice the leek diagonally. Slice the green and red chilies diagonally after removing the seeds, for color and a hint of spice.

Step 2

Step 3

Cut the radish greens into bite-sized pieces. Gently mix them with 1 Tbsp of soybean paste and the red chili flakes. Marinating the greens beforehand allows them to absorb the flavors better, resulting in a richer taste.

Step 3

Step 4

Pour the strained clam broth into a pot. Dissolve the remaining 1 Tbsp of soybean paste into the broth. Once it starts to boil, add the marinated radish greens. Then, add the minced garlic to build the foundation of the savory miso soup.

Step 4

Step 5

As the soup simmers, add the washed soybean sprouts. Season with 1 Tbsp of fish sauce (or soy sauce for soup) and 1 Tbsp of soy sauce for soup to enhance the umami and saltiness. If you don’t have fish sauce, you can use more soy sauce for soup.

Step 5

Step 6

Bring the soup to a boil, then reduce the heat to medium and simmer for about 10 minutes, allowing the radish greens and soybean sprouts to become tender. Finally, add the sliced leeks, green chilies, and red chilies, and cook for another 5 minutes to infuse their aroma. Add the reserved clams and simmer briefly. Finish with a pinch of black pepper for a refreshing and delicious radish greens miso soup!
