Easy Zucchini and Eggplant Gratin Recipe using Fridge Staples
Whip up a delightful cheese gratin using those zucchini and eggplants lurking in your fridge, along with some ham. It’s as simple as sautéing, mixing, and baking! This dish is not only easy but also impressive in both taste and appearance, perfect for a satisfying meal or a home party. Experience the fantastic harmony of the tomato sauce’s sweet and tangy notes, the vegetables’ flavors, and the stringy melted mozzarella cheese.
Essential Ingredients- 1/3 medium Zucchini (approx. 80g)
- 1/3 medium Eggplant (approx. 80g)
- 4 Tbsp Tomato Sauce (approx. 60ml)
- 2 handfuls Mozzarella Cheese (approx. 80g)
Cooking Instructions
Step 1
First, finely chop the zucchini, eggplant, and gimbap ham (or processed ham) into bite-sized pieces. If using onion, finely mince it as well. Be careful not to chop them too small, as the vegetables will shrink when cooked.
Step 2
Heat a pan over medium heat and add about 1 Tbsp of olive oil or cooking oil. Add the minced onion and sauté for about 1 minute until translucent and fragrant. (If you’re not using onion, skip this step and proceed to sautéing the zucchini and eggplant.)
Step 3
Once the onion is softened, add the chopped zucchini and eggplant to the pan. Sauté over medium heat for about 3-4 minutes until the vegetables are slightly tender and have wilted. Avoid overcooking, as this can release too much water.
Step 4
Add the chopped gimbap ham (or processed ham) to the pan and sauté for another minute. The ham adds a wonderful savory depth to the dish. Feel free to use other types of ham or even bacon if you have them on hand.
Step 5
Reduce the heat to low. Add the tomato sauce (4 Tbsp or approx. 60ml) to the sautéed vegetables and ham. Mix everything well until evenly coated. You can adjust the amount of tomato sauce based on the quantity of vegetables and your personal preference. Ensure the mixture is moist.
Step 6
Transfer the vegetable and ham mixture to an oven-safe dish (like a gratin dish or a small baking dish). Sprinkle a generous layer of mozzarella cheese evenly over the top. If you love cheese, don’t hesitate to add even more!
