Make Sumi’s Side Dishes’ super easy scallion kimchi in just 5 minutes! The ingredients and method are incredibly simple. Perfect for a quick, flavorful side dish.
Main Ingredients- 1 bunch scallions (focus on the white parts)
- 2 Tbsp minced garlic
- 2/3 Tbsp minced ginger
- Red pepper flakes (gochugaru) to taste
- Fish sauce (anchovy sauce, adjust to taste)
- Toasted sesame seeds, for garnish
Cooking Instructions
Step 1
First, prepare the scallions. For kimchi, we primarily use the white parts of the scallions. Trim off any wilted leaves or overly green tops, keeping only the white stems and cleaning them thoroughly.
Step 2
Trim off the root end of the scallions with a knife and wash them carefully under running water. Make sure to rinse away any soil or debris.
Step 3
Cut the cleaned scallions into bite-sized pieces. They should be cut into roughly 3-4 cm lengths, not too thin, to ensure a pleasant texture.
Step 4
Now it’s time to mix all the ingredients. Place the chopped scallions into a large bowl.

Red pepper flakes are key to the color and spiciness of the kimchi. Adjust the amount according to your preference. I used about half a paper cup for a nice vibrant color, but feel free to add more if you like it spicier.
Step 6
Add the minced garlic and minced ginger, then pour in the fish sauce. It’s best to add the fish sauce gradually while tasting, rather than all at once. Mix everything together gently by hand.
Step 7
Taste the kimchi after mixing. If you still detect a strong raw scallion flavor, it means the seasoning hasn’t fully penetrated yet. Continue to add fish sauce little by little until the sharp raw taste mellows into a savory depth. Sprinkle with toasted sesame seeds for an extra nutty aroma and flavor.
