This recipe is perfect for when you need something simple and fast. Enjoy the delightful combination of sweet potatoes and melty cheese!

Ingredients

  • 1 medium sweet potato
  • A small amount of broccoli (about 50g)
  • 60g mozzarella cheese
  • 2-3 Tbsp cooking oil

Seasoning

  • 1 pinch fine salt

Cooking Instructions

Step 1

First, wash the sweet potato thoroughly and dice it into small pieces, about 0.5cm thick. If the pieces are too thick, they will take longer to cook.

Rinse the diced sweet potato under running water to remove excess starch, then drain well in a colander. Excess water can cause splattering or sticking during stir-frying.

Wash the broccoli well and chop it into small, bite-sized pieces (about 1cm). You can briefly blanch the broccoli beforehand to shorten the cooking time.

Heat 2-3 tablespoons of cooking oil in a pan over medium heat. Add the drained sweet potato pieces and stir-fry until they are lightly golden brown on the surface for a richer flavor.

Once the sweet potatoes are lightly stir-fried, cover the pan with a lid and cook over medium heat for about 3-4 minutes. Stir occasionally to ensure even cooking. The sweet potatoes should be slightly tender.

Add the prepared broccoli and a pinch of fine salt to the pan. Stir-fry for another 1-2 minutes with the sweet potatoes, allowing the broccoli to slightly cook and blend with the sweet potatoes.

Push the ingredients to one side of the pan, then sprinkle the 60g of mozzarella cheese evenly into the empty space. It’s important to reduce the heat to low at this stage.

Cover the pan again and let the cheese melt over low heat for 1-2 minutes. Be careful not to burn the cheese; it will melt gently from the steam released by the sweet potatoes and broccoli.
