Revive Wilted Scallions with Seasoned Seaweed: A Speedy 5-Minute Side Dish
Scallions are wonderful as a main ingredient in kimchi or fresh wraps, but why not give them a new life? This ‘Scallion Kim Muchim’ (spicy seasoned scallion salad) is a delightful way to use up those slightly wilted scallions from your fridge. The savory, crispy seasoned seaweed combined with a simple, flavorful dressing transforms them into a delicious side dish. In just 5 minutes, you’ll have a tasty addition to your meal!
Main Ingredients- 1 bunch scallions (approx. 100g)
- 7 sheets seasoned seaweed snacks
Seasoning Ingredients- 1/2 Tbsp soy sauce or fish sauce
- 1/2 Tbsp gochujang (Korean chili paste)
- 1/3 Tbsp plum extract (maesilcheong)
- 1/3 Tbsp sesame oil
- 1/3 Tbsp sesame seeds (adjust to taste)

Cooking Instructions
Step 1
First, wash the scallions thoroughly. Bring a pot of water to a boil and blanch the scallions for just about 10-20 seconds. Be careful not to overcook them, as they can become mushy.
Step 2
Immediately after blanching, rinse the scallions under cold running water to stop the cooking process and cool them down completely. Rinsing in cold water helps maintain their crispiness. Rinse them a couple of times and drain well.
Step 3
Once drained, cut the scallions into bite-sized pieces, about 5-7 cm long, and place them in a mixing bowl. Cutting them into manageable lengths will make them easier to eat.
Step 4
Add the seasoning ingredients (1/2 Tbsp soy sauce or fish sauce, 1/2 Tbsp gochujang, 1/3 Tbsp plum extract) to the chopped scallions. Gently mix them together by hand, tossing them as if you were kneading dough. Don’t worry if it seems a little dry at first; the scallions will release moisture as they sit, and the seasoning will distribute evenly. (Tip: You can add the sesame seeds at the end, but mixing them in now will enhance the nutty flavor. It’s okay if you accidentally add a little extra!)
Step 5
Finally, crumble the 7 sheets of seasoned seaweed snacks into small pieces and sprinkle them evenly over the seasoned scallions. Gently mix everything together again. Your delicious Scallion Kim Muchim is now ready to serve, with the added savory crunch of the seaweed!
